Evie's Delicious Pumpkin & Carrot Soup

Pumpkin can boost your vision as one cup contains almost twice the recommended daily amount of Vitamin A. Pumpkin is also rich in Beta-carotene and is packed with antioxidants.


·         1/2 butternut pumpkin
·         1 medium sweet potato
·         1 onion, roughly chopped 
·         3 carrots, roughly chopped 
·         1 or 2 cloves of garlic, chopped (optional)
·         1 chilli, chopped (optional)
·         Drizzle of olive oil
·         Salt and pepper to taste 


1.     Wash and roughly cut all the vegetables.
2.     In a pot, add a little olive oil and sauté onion, chilli and garlic for 2-3 minutes.
3.     Once onion is soft, add remaining vegetables and enough water to cover the vegetables, season with salt and pepper and cook on low heat until tender. Once Allow to cool slightly, then blend in batches. 
4.     Serve soup in a bowl with some some cracked pepper on top. Enjoy!
