Fakes - Greek Lentil Soup

Lentils are versatile, easy to prepare and a nutritious ingredient that is high in protein, fibre, iron and folate. Consuming plant-based foods of all kinds is associated with a reduced risk of many lifestyle-related health conditions.

  • 500g brown lentils 
  • 5 cups of water
  • 1 small red onion, diced 
  • 2 cloves of garlic, finely chopped
  • 2 bay leaves
  • 1 tablespoon olive oil
  • Pinch of oregano 
  • Salt and pepper to taste 

  1. To prepare the fakes (lentil soup), start by washing lentils thoroughly and let them soak in water for about 2 hours. You can skip this process (I do) by cooking lentils over high heat in a pot with just enough water to cover lentils. As soon as they come to the boil, drain them into a colander.
  2. Place a pot over medium-low heat, add lentils, water, onion, garlic, bay leaves, oregano, olive oil, salt and pepper. Simmer with the lid on for about 35-45 minutes, until soup thickens and lentils are soft.
  3. Serve fakes (lentil soup) warm with a splash of red wine vinegar. Enjoy!
