Apple & Mandarin Muffins

Nutritious muffins can be a great breakfast or snack on the run and they are also great for kids. Mandarins contain a high level of Vitamin C and can also help to lower blood pressure. 

Ingredients:

  • 350g self-raising wholemeal flour
  • 1 apple, roughly grated (skin on)
  • 2 mandarins, roughly chopped (remove seeds as you chop them)
  • 1 tablespoon chia seeds
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1/4 cup freshly squeezed orange juice
  • 2 free range eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
Method:
  1. Preheat oven to 170°C fan forced.
  2. Combine chopped mandarins, grated apple, chia seeds, olive oil, orange juice, vanilla, baking powder, honey and eggs into a mixing bowl.
  3. Add flour and mix well while pushing down on the fruit with spoon.
  4. Spoon muffin mix into prepared muffin tins.
  5. Bake for 30 - 35 minutes or until cooked through. Enjoy!
