Apple & Mandarin Muffins
Nutritious muffins can be a great breakfast or snack on the run and they are also great for kids. Mandarins contain a high level of Vitamin C and can also help to lower blood pressure.
Ingredients:
- 350g self-raising wholemeal flour
- 1 apple, roughly grated (skin on)
- 2 mandarins, roughly chopped (remove seeds as you chop them)
- 1 tablespoon chia seeds
- 1/4 cup olive oil
- 1/4 cup honey
- 1/4 cup freshly squeezed orange juice
- 2 free range eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
Method:
- Preheat oven to 170°C fan forced.
- Combine chopped mandarins, grated apple, chia seeds, olive oil, orange juice, vanilla, baking powder, honey and eggs into a mixing bowl.
- Add flour and mix well while pushing down on the fruit with spoon.
- Spoon muffin mix into prepared muffin tins.
- Bake for 30 - 35 minutes or until cooked through. Enjoy!
