Chia Seed & Fruit Delight

A healthy and easy to make, guilt free dessert or snack. Chia seeds contain omega 3 fatty acids, carbohydrates, protein, fibre, antioxidants and calcium. 

Ingredients:
  • 1/2 cup white or black chia seeds
  • 3/4 cup coconut water (you can make it with milk, coconut milk or almond milk)
  • Splash of vanilla essence
  • 1 Banana and a handful of blueberries
Method:
  1. In a container, mix chia seeds into the coconut water.
  2. Add vanilla essence.
  3. Store in an airtight container overnight.
  4. To serve, put chia pudding into a bowl and layer with desired fruit. I put banana and blueberries. 
Suggestions for serving: You can add honey, agave syrup or yogurt. (I find it sweet enough without). Also try with different fruit like, peach, mango, banana, mixed berries etc.
