Cauliflower, kale & Pine Nut Salad
Cauliflower is an incredibly nutritious cruciferous vegetable. This group of plants is known for its low-calorie count and high nutrient content including a variety of vitamins, minerals and antioxidants that the body needs to function optimally. Cauliflower can help with inflammation, digestion, heart and brain health. Other vegetables which fit into the cruciferous vegetable category include broccoli, Brussels sprouts, bok choy, cabbage, collards, and kale.
Ingredients:
- 2 cups cauliflower florets
- 1 bunch kale, ribs removed, chopped
- 1/2 small red onion, thinly sliced
- 50g feta cheese
- Extra virgin olive oil
- 1/4 cup lemon juice
- 2 tablespoons of pine nuts
Method:
- On a large baking sheet, toss cauliflower florets with a little olive oil,salt and pepper. Roast in 200°C oven for 25 minutes, or until stems are tender.
- In large bowl, whisk lemon juice, 2 tablespoons of olive oil and a little salt. Toss kale with dressing. Let stand at least 5 minutes.
- To kale, add cooked cauliflower, onion, feta cheese, and pine nuts. Toss until well combined. Enjoy!
