Fish Cakes
These healthy fish cakes are delicious and easy to make. Fish is among the healthiest foods on the planet. It is loaded with important nutrients, such as protein and vitamin D. Fish is also a great source of omega-3 fatty acids, which are incredibly important for your body and brain.
Ingredients:
- ¼ bunch fresh parsley leaves
- 1-2 shallots, roughly cut
- 1 red onion, peeled
- 1 clove garlic
- 1 egg, lightly beaten
- 500 g firm white fish like
Snapper, Blue Eye Trevalla or Mahi-Mahi, roughly diced
- 1 slice multigrain bread, made into breadcrumbs
- 1 lemon -zest finely grated and
juice of half lemon
- Salt and freshly ground black pepper to taste
Method:
- In a food processor, process parsley, onion, shallots and garlic until finely chopped.
- Add the fish, breadcrumbs, egg, seasoning, lemon and
zest and process to a rough paste. If you don't have a processor, you can
dice the ingredients finely and squeeze together with your hands.
- Roll with wet hands into 8 patties.
- Heat a non stick fry-pan on medium heat and drizzle olive oil, coconut oil or a little butter.
- Cook fish cakes for about 3-4 minutes on each side or until
just brown.
- Serve immediately with a lemon or
lime wedge and a salad. Enjoy!
