Lentil & Quinoa Salad

This delicious lentil & quinoa salad recipe has it all; protein, iron, veggies, and the health benefits of quinoa.

Ingredients:

  • ½ cup lentils 
  • ½ cup quinoa 
  • 1 cucumber, sliced 
  • ½ cup cherry tomatoes, halved 
  • ½ Spanish onion, sliced 
  • ½ capsicum, sliced

Dressing: 

In a small bowl combine.

  • Juice of one lemon, add more for extra tang if preferred
  • 1 tablespoon red or white vinegar
  • 1 tablespoon seeded mustard (optional) 
  • 2 tablespoons olive oil 
  • Salt and ground black pepper to taste  

 Method: 

  1. Cook your choice of quinoa and lentils according to package directions. Drain and allow to cool. 
  2. In a medium salad bowl, add the quinoa, lentils, cucumber, tomatoes, capsicum, and onion.
  3. Top the salad with the dressing, toss to coat and serve. Enjoy!

 Tips; 

  • You can mix and match vegetables and dressing of your choice. 
  • Store in the fridge for up to 4 days.
