Greek Salad - Horiatiki
A Greek salad goes well with every dish. Serving this salad as a part of your Christmas feast will not disappoint.
Ingredients:- 2-3 fragrant, ripe tomatoes
- 1 cucumber, skin peeled
- 1 red onion, sliced
- 6-7 Kalamata Olives
- ½ green capsicum, sliced
- Pinch of dried oregano
- Pinch of salt
- Dash of Extra Virgin Olive Oil
- Splash of red wine vinegar or the juice of a ½ a lemon
- 1/2 block creamy feta cheese
Method:
- In a salad bowl, cut tomatoes, cucumber, onion and capsicum in large slices or chunks
- Add pitted Kalamata olives (or your favourite olives)
- Add a dash of salt and dried oregano
- Toss salad with Extra Virgin Olive oil and red wine vinegar or lemon juice
- Break feta in large pieces and place on top (I like to add a sprinkle of oregano on feta too)
- Serve and enjoy!
