Banana, Oatmeal & Cinnamon Cookies

A healthy and simple cookie recipe that's perfect for a snack. What I love about making these cookies is that you can just throw all the ingredients into a bowl, mix and bake! 

Ingredients:

  • 150g smashed ripe banana
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla bean paste
  • 200g rolled oats
  • ½ cup desiccated coconut
  • ¼ cup organic maple syrup
  • ¼ cup olive oil or soft butter


Method:


  1. Preheat your oven to 130°C / 270°F.
  2. Combine all the ingredients into a large bowl.
  3. Mix mixture well with your hands until it starts to bind. (you can also use a food processor).
  4. Form into 12 cookies. I use a tablespoon but you can also use your hands.
  5. Flatten slightly.
  6. Bake in a moderately low oven for 30 - 35 minutes or until golden and set on the outside.
  7. Cool and enjoy! 

 Makes 12 cookies


Notes: 

  •  You can add- ½ cup raisins or good quality dark chocolate chips or a little of both - you can also use dried blueberries. 

  • Will keep for 4-5 days in an airtight container.
