Banana, Oatmeal & Cinnamon Cookies
A healthy and simple cookie recipe that's perfect for a snack. What I love about making these cookies is that you can just throw all the ingredients into a bowl, mix and bake!
Ingredients:
- 150g smashed ripe banana
- ½ teaspoon ground cinnamon
- 1 teaspoon vanilla bean paste
- 200g rolled oats
- ½ cup desiccated coconut
- ¼ cup organic maple syrup
- ¼ cup olive oil or soft butter
Method:
- Preheat your oven to 130°C /
270°F.
- Combine all the ingredients
into a large bowl.
- Mix mixture well with your hands until it starts to bind. (you can also use
a food processor).
- Form into 12 cookies. I use a tablespoon but you can also use your hands.
- Flatten slightly.
- Bake in a moderately low
oven for 30 - 35 minutes or until golden and set on the outside.
- Cool and enjoy!
Notes:
- Will keep for 4-5 days in an airtight container.
