Date, Apricot & Coconut Power Bars

Oats can lower cholesterol, are a great source of soluble fibre and help regulate your appetite. Cinnamon improves insulin efficiency, which helps regulate blood sugar levels. Combine chia seeds, LSA and nuts for protein and vitamins, you have a power bar full of goodness!



Ingredients:
  • 350g rolled oats
  • 1 tablespoon LSA mix 
  • 1 tablespoon chia seeds
  • 3 tablespoons shredded coconut
  • 3 free range eggs
  • 1/2 cup pitted dates, roughly chopped 
  • 1/2 cup dried apricots, roughly chopped  
  • 1 cup mixed nuts, I used almonds, sunflower seeds, walnuts and pecan nuts. (Measure 1 cup first, then roughly chop nuts in a food processor)
  • 1 teaspoon vanilla paste
  • 1 teaspoon cinnamon
  • 1/4 cup olive oil
  • 1/4 cup raw honey
  • Good quality maple syrup to drizzle on top 
Method:
  1. Preheat oven to 160°C – fan forced.
  2. Combine all ingredients in one large bowl, mix well. 
  3. Spoon evenly into a square baking tin lined with baking paper.
  4. Drizzle maple syrup on top of mixture. 
  5. Bake for 25 – 30 minutes until golden.
  6. Cool and then cut into 9 square pieces or into 18 rectangle smaller pieces. Enjoy! 
Notes: 
  • You can substitute dates and apricots for sultanas, currants and/or raisins 
  • Store in fridge in an airtight container for up to 5 days
