Macadamia & Coconut Protein Balls

Protein balls have a satiating combination of protein, good carbs, healthy fats, and are high in fibre. Each ball has between 100-200 calories depending on the ingredients. These macadamia balls are quick and easy to make and even easier to eat when you need a satisfying snack. 


Ingredients
  • 140g macadamia nuts
  • 40g chia seeds (optional) 
  • 160g pitted dates 
  • 1 teaspoon concentrated natural vanilla extract 
  • 1 tablespoon liquid coconut oil 
  • 100g desiccated coconut plus extra 100g for coating 
Method:  

      1. Place all ingredients in a food processor to combine. 
      2. Pour mixture into a bowl. 
      3. With your hands knead the dough until well combined. 
      4. Form dough into 12-15 even balls. 
      5. On a plate, roll balls into coconut until evenly coated. Enjoy! 


Note: Store protein balls in an airtight container for up to 7 days or you can freeze them for longer.
