Delicious Poached Chicken

Poached chicken is not only healthy but delicious too. You can use a variation of your favourite fresh herbs to make a juicy, tender and flavoursome poached chicken. 




Ingredients:
  • 400g (3-4) free range chicken breast fillets
  • 1 large onion, sliced into 1/2 inch slices 
  • 2-3 garlic cloves
  • 1 chilli, chopped (optional) 
  • 1-2 bay leaves 
  • Handful of mixed fresh herbs, thyme or rosemary and parsley 
  • Salt and peppercorns
  • Water as needed 
Method:
  1. In a large saucepan add chicken breast, onion, chilli, garlic cloves, bay leaves, rosemary, parsley, salt and peppercorns. Add enough water to cover solids. 
  2. Gently stir and bring to a boil. 
  3. Reduce the heat to low, cover and let simmer for about 20-25 minutes or until chicken is cooked through. Remove from heat. Stand chicken in liquid for 5 minutes.
  4. Remove chicken from the poaching liquid and place it on a cutting board. Cut chicken into slices.
  5. Serve with rice or a salad. Enjoy!
Note: Broth from chicken can be used for chicken soup.
