Delicious Poached Chicken
Poached chicken is not only healthy but delicious too. You can use a variation of your favourite fresh herbs to make a juicy, tender and flavoursome poached chicken.
Ingredients:
- 400g (3-4) free range chicken breast fillets
- 1 large onion, sliced into 1/2 inch slices
- 2-3 garlic cloves
- 1 chilli, chopped (optional)
- 1-2 bay leaves
- Handful of mixed fresh herbs, thyme or rosemary and parsley
- Salt and peppercorns
- Water as needed
Method:
- In a large saucepan add chicken breast, onion, chilli, garlic cloves, bay leaves, rosemary, parsley, salt and peppercorns. Add enough water to cover solids.
- Gently stir and bring to a boil.
- Reduce the heat to low, cover and let simmer for about 20-25 minutes or until chicken is cooked through. Remove from heat. Stand chicken in liquid for 5 minutes.
- Remove chicken from the poaching liquid and place it on a cutting board. Cut chicken into slices.
- Serve with rice or a salad. Enjoy!
Note: Broth from chicken can be used for chicken soup.
