Garlic & Thyme Sweet Potato Bake

Sweet potatoes are an excellent source of Vitamin A, C, potassium, niacin, manganese, copper, pantothenic acid, fibre and Vitamin B6.

Ingredients: 
  • 2 large sweet potatoes 
  • 2 tablespoons olive oil 
  • 1 tablespoon fresh thyme, chopped
  • 1 garlic clove, minced
  • 1 teaspoon paprika 
  • Pinch of cayenne pepper (optional) 
  • Salt and pepper to taste 

Method: 
  1. Preheat oven to 200°C. 
  2. Wash and peel (you can also leave skin on) sweet potatoes then slice them into 1/8 - inch thick slices.
  3. In a small bowl, stir together garlic, thyme, paprika, cayenne pepper, salt and pepper. 
  4. In a large bowl place the sweet potato slices and drizzle the olive oil on top. 
  5. Sprinkle the spice mix over the sweet potatoes and toss until the sweet potatoes are covered well with the olive oil and spice mix. 
  6. Arrange the seasoned sweet potato slices in a casserole dish, stacked in a row.
  7. Cover the dish with foil and cook for 30 min. Remove foil and let cook for additional 20 min or until soft. Serve hot. Enjoy!
