Date & Cocoa Bliss Balls
Protein balls have a satiating combination of protein, good carbs, healthy fats, and are high in fibre. Each ball has between 100-200 calories depending on the ingredients. These macadamia balls are quick and easy to make and even easier to eat when you need a satisfying snack.
Ingredients:
- 12 dates
- 1 cup almond meal
- 1/2 cup shredded coconut
- 1/3 cup coconut oil
- 1/3 cup cacao powder
- 1 tbsp chia seeds (optional)
- 1/3 cup shredded coconut for rolling
Method:
- Place dates in a medium bowl and cover with water. Stand for 1 hour. Drain and discard seeds.
- Process dates, almond meal, shredded coconut, coconut oil, cacao powder and chia seeds until mixture comes together. Transfer to a bowl and stand for 20 minutes for chia seeds to soften.
- Place remaining coconut in a shallow dish.
- Roll level tablespoons of mixture into 15 balls. Roll in coconut to coat.
Note: Store protein
balls in an airtight container for up to 7 days or
you can freeze them for longer.
