Evie's Spanakorizo

Spanakorizo, is a traditional Greek rice and spinach dish that is not only nutritious but full of flavour as well. Spinach is high in protein, fibre, Vitamins A, C, E, K, Vitamin B6, folate, calcium, iron, magnesium, potassium, copper, manganese and zinc.

Ingredients:
  • 1/4 cup of Arborio or medium-grain rice
  • 1 onion, finely diced
  • Dash of olive oil 
  • 1 big bunch of English spinach, washed and roughly chopped
  • 1 tablespoon fresh dill, chopped 
  • 3 cups of water
  • Juice of 1 lemon 
  • Salt and pepper to taste 
Method:
  1. In a large pot, heat olive oil and sauté onion until it becomes translucent.
  2. Add spinach and dill. Stir through until it wilts. 
  3. Add rice, water, lemon juice, salt and pepper. 
  4. Place lid on pot. Cook on medium heat for about 20-30 min. You want a little liquid to be left over. 
  5. Serve warm in a bowl as a main or side dish. Enjoy!
 Serves 4-6
