Beetroot & Rocket Salad
Rocket is high in vitamins C and K, rocket can promote a healthy heart, bones and skin. Beetroot is high in fibre and has been associated with numerous health benefits, including improved blood flow, lower blood pressure, and increased exercise performance.
- 250g fresh (boiled or roasted) baby beetroot, halved
- 120g rocket leaves
- 60g Greek feta or goat’s cheese
- 3 tbsp walnuts, lightly crushed with your fingers (sunflower seeds or quinoa are another option)
Dressing:
- 2 ½ tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Juice of half a lemon
- Salt to taste
Instructions:
- Combine dressing ingredients in a bowl. Mix well with a spoon. Adjust salt to your taste.
- Place rocket lettuce in a serving bowl.
- Add beetroot, crumble feta and scatter with walnuts.
- Drizzle dressing over salad. Serve, Enjoy!
