Beetroot & Rocket Salad

Rocket is high in vitamins C and K, rocket can promote a healthy heart, bones and skin. Beetroot is high in fibre and has been associated with numerous health benefits, including improved blood flow, lower blood pressure, and increased exercise performance.

 Ingredients:

  • 250g fresh (boiled or roasted) baby beetroot, halved
  • 120g rocket leaves
  • 60g Greek feta or goat’s cheese
  • 3 tbsp walnuts, lightly crushed with your fingers (sunflower seeds or quinoa are another option)

Dressing:

  • 2 ½ tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Juice of half a lemon
  • Salt to taste

Instructions:

  1. Combine dressing ingredients in a bowl. Mix well with a spoon. Adjust salt to your taste.
  2. Place rocket lettuce in a serving bowl.
  3. Add beetroot, crumble feta and scatter with walnuts. 
  4. Drizzle dressing over salad. Serve, Enjoy!
