Fakes - Greek Lentil Soup
Lentils are versatile, easy to prepare and a nutritious ingredient that is high in protein, fibre, iron and folate. Consuming plant-based foods of all kinds is associated with a reduced risk of many lifestyle-related health conditions.
Ingredients:
- 500g brown lentils
- 5 cups of water
- 1 small red onion, diced
- 2 cloves of garlic, finely chopped
- 2 bay leaves
- 1 tablespoon olive oil
- Pinch of oregano
- Salt and pepper to taste
Method:
- To prepare the fakes (lentil soup), start by washing lentils thoroughly and let them soak in water for about 2 hours. You can skip this process (I do) by cooking lentils over high heat in a pot with just enough water to cover lentils. As soon as they come to the boil, drain them into a colander.
- Place a pot over medium-low heat, add lentils, water, onion, garlic, bay leaves, oregano, olive oil, salt and pepper. Simmer with the lid on for about 35-45 minutes, until soup thickens and lentils are soft.
- Serve fakes (lentil soup) warm with a splash of red wine vinegar. Enjoy!
