Evie's Apricot & Almond Balls
These apricot and almond balls have a satiating combination of protein, good carbs, healthy fats, and are high in fibre. Each ball has between 100-200 calories depending on the ingredients. Not only delicious but quick and easy to make and even easier to eat when you need a satisfying snack.
Ingredients:
- 1 cup rolled oats
- 1 teaspoon honey
- 1 tablespoon flaxseed mix
- 2 tablespoons shredded coconut
- 15 pitted dates
- 6-7 dried apricots
- 1/4 cup whole almonds
- 1/2 teaspoon cinnamon
- 1 teaspoon concentrated natural vanilla extract
- 2 tablespoons liquid coconut oil
- Shredded coconut and/or cocoa to coat protein balls
Method:
- Place oats, coconut, flaxseed, honey, vanilla, cinnamon and coconut oil into a food processor, combine well.
- Add dates, apricots and almonds into food processor, combine to your liking of texture.
- Pour mixture into a bowl.
- With your hands knead the dough until well combined. Form dough into 10-12 even balls.
- On a plate, roll balls into shredded coconut and/or cocoa.
- Store protein balls in the fridge up to 7 days in an airtight container or you can freeze them for longer. Enjoy!
Notes: If the protein ball mixture seems a little too dry or crumbly, add more coconut oil, a teaspoon at a time, until the mixture forms well together.
