Evie's Apricot & Almond Balls

These apricot and almond balls have a satiating combination of protein, good carbs, healthy fats, and are high in fibre. Each ball has between 100-200 calories depending on the ingredients. Not only delicious but quick and easy to make and even easier to eat when you need a satisfying snack.

Ingredients:

  • 1 cup rolled oats
  • 1 teaspoon honey
  • 1 tablespoon flaxseed mix
  • 2 tablespoons shredded coconut
  • 15 pitted dates
  • 6-7 dried apricots 
  • 1/4 cup whole almonds
  • 1/2 teaspoon cinnamon
  • 1 teaspoon concentrated natural vanilla extract
  • 2 tablespoons liquid coconut oil
  • Shredded coconut and/or cocoa to coat protein balls 

Method:
  1. Place oats, coconut, flaxseed, honey, vanilla, cinnamon and coconut oil into a food processor, combine well. 
  2. Add dates, apricots and almonds into food processor, combine to your liking of texture. 
  3. Pour mixture into a bowl. 
  4. With your hands knead the dough until well combined. Form dough into 10-12 even balls.
  5. On a plate, roll balls into shredded coconut and/or cocoa.
  6. Store protein balls in the fridge up to 7 days in an airtight container or you can freeze them for longer. Enjoy! 
Notes: If the protein ball mixture seems a little too dry or crumbly, add more coconut oil, a teaspoon at a time, until the mixture forms well together.
