Banana & Coconut Bread
Ingredients:
- 3 medium very ripe bananas, mashed
- 250g wholemeal self-rising flour
- 100g desiccated coconut
- 2 eggs
- 1/4 cup honey, depending on how sweet you want it
- 1/4 cup olive oil
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla paste or extract
- 1 teaspoons baking powder
- 1/2 teaspoon bicarbonate of (baking) soda
- Small handful of crushed walnuts and 1 tablespoon of desiccated coconut for decoration
Method:
- Preheat oven to 165C (fan forced)
- Combine smashed banana, eggs, honey, baking soda and powder, cinnamon, vanilla and oil into a bowl.
- Add wholemeal flour and coconut, mix through until combined.
- Line a loaf tin with baking paper and spoon mixture into it.
- Decorate the top of the bread by adding crushed walnuts and coconut.
- Bake for 55-60 minutes or until the bread has cooked through.
- Cool completely in the tin before removing.
- Serve at room temperature or lightly toasted, Enjoy!
