Banana & Coconut Bread

Many café or store brought banana breads tend to be high in calories, sugar and fats. However, making your own at home is the ideal way to control ingredients for a healthy, delicious snack you can enjoy more often.

Ingredients:
  • 3 medium very ripe bananas, mashed
  • 250g wholemeal self-rising flour 
  • 100g desiccated coconut
  • 2 eggs
  • 1/4 cup honey, depending on how sweet you want it 
  • 1/4 cup olive oil
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla paste or extract
  • 1 teaspoons baking powder
  • 1/2 teaspoon bicarbonate of (baking) soda 
  • Small handful of crushed walnuts and 1 tablespoon of desiccated coconut for decoration
Method:
  1. Preheat oven to 165C (fan forced)
  2. Combine smashed banana, eggs, honey, baking soda and powder, cinnamon, vanilla and oil into a bowl. 
  3. Add wholemeal flour and coconut, mix through until combined.
  4. Line a loaf tin with baking paper and spoon mixture into it.
  5. Decorate the top of the bread by adding crushed walnuts and coconut.
  6. Bake for 55-60 minutes or until the bread has cooked through.
  7. Cool completely in the tin before removing. 
  8. Serve at room temperature or lightly toasted, Enjoy!
