Banana & Yogurt Bread
Ingredients:
- 3 medium very ripe bananas, mashed
- 1 extra banana, peeled and cut lengthwise for decoration
- 250g wholemeal self-rising flour
- 1/4 cup desiccated coconut
- 1/2 cup walnuts, roughly chopped (optional)
- 1/2 cup natural Greek-style yogurt
- 1 egg, lightly beaten
- 1/4 cup honey, (add more if you prefer sweeter)
- 1/4 cup olive oil
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla paste or extract
- 1 teaspoon baking powder
- 1/2 teaspoon bicarbonate of (baking) soda
Method:
- Preheat oven to 165°C
- Line a 10cm x 21cm loaf tin with baking paper
- Combine smashed banana, yogurt, egg, honey, baking soda and powder, cinnamon, vanilla and oil into a bowl. Add flour, oil, coconut and walnuts, mix through until well combined. Pour mixture into the loaf tin.
- Place extra sliced banana on top and brush with a little honey.
- Bake for 60-65 minutes or until the bread has cooked through.
- Cool completely in the tin before removing.
- Serve at room temperature or lightly toasted, Enjoy!
