Banana & Yogurt Bread

Many café or store brought banana breads tend to be high in calories, sugar and fats. However, making your own at home is the ideal way to control ingredients for a healthy, delicious snack you can enjoy more often.
Ingredients:
  • 3 medium very ripe bananas, mashed
  • 1 extra banana, peeled and cut lengthwise for decoration 
  • 250g wholemeal self-rising flour 
  • 1/4 cup desiccated coconut 
  • 1/2 cup walnuts, roughly chopped (optional) 
  • 1/2 cup natural Greek-style yogurt 
  • 1 egg, lightly beaten 
  • 1/4 cup honey, (add more if you prefer sweeter)
  • 1/4 cup olive oil
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla paste or extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of (baking) soda 
Method:
  1. Preheat oven to 165°C
  2. Line a 10cm x 21cm loaf tin with baking paper 
  3. Combine smashed banana, yogurt, egg, honey, baking soda and powder, cinnamon, vanilla and oil into a bowl. Add flour, oil, coconut and walnuts, mix through until well combined. Pour mixture into the loaf tin.
  4. Place extra sliced banana on top and brush with a little honey. 
  5. Bake for 60-65 minutes or until the bread has cooked through.
  6. Cool completely in the tin before removing. 
  7. Serve at room temperature or lightly toasted, Enjoy!
