Delicious Banana & Raspberry Bread

Many café or store brought banana breads tend to be high in calories, sugar and fats. However, making your own at home is the ideal way to control ingredients for a healthy, delicious snack you can enjoy more often.



Ingredients:
  • 3 medium very ripe bananas, mashed
  • 1 cup fresh or frozen raspberries
  • 250g wholemeal self-rising flour 
  • 1/4 cup desiccated coconut  
  • 1/2 cup natural Greek-style yogurt 
  • 1 egg, lightly beaten 
  • 1/4 cup honey, (add more if you prefer sweeter)
  • 1/4 cup olive oil
  • 1 teaspoons ground cinnamon
  • 1 teaspoon vanilla paste or extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of (baking) soda 
Method:
  1. Preheat oven to 165°C
  2. Line a 10cm x 21cm loaf tin with baking paper 
  3. Combine smashed banana, raspberries, yogurt, egg, honey, baking soda and powder, cinnamon, vanilla and oil into a bowl. Add flour, oil and coconut. Mix through until well combined. Pour mixture into the loaf tin. I like to add shredded coconut on top. 
  4. Bake for 60-65 minutes or until the bread has cooked through.
  5. Cool completely in the tin before removing. 
  6. Serve at room temperature or lightly toasted, Enjoy!
