Delicious Tomato & Basil Chicken

There are 35 different types of basil. Basil is an immune booster and its packed with antioxidants. Basil is also an anti - inflammatory and can reduce pain and fever.

Ingredients: 
  • 4 small chicken breasts 
  • 3 ripe tomatoes, chopped 
  • 1/2 Spanish onion, diced 
  • 1 clove garlic, minced 
  • Handful of basil, chopped 
  • 1 teaspoon of olive oil 
  • 1 teaspoon of balsamic vinegar glaze 
  • Salt and pepper to taste 

Method: 
  1. Bake, grill or pan fry chicken with a little butter or oil. 
  2. While chicken is cooking prepare topping by combining tomatoes, garlic, onion, basil, oil, vinegar, salt and pepper in a bowl. Mix well and refrigerate. 
  3. Once chicken is cooked, spoon tomato and basil mixture on top and serve. Enjoy!
